Have you ever wondered what it’d be like to dine at The French Laundry? Me too. Interestingly enough you can now get a sip of what it’s like to dine at the famous Napa Valley restaurant. “The 2015 Modicum is an Extra Brut made of 100% Chardonnay created in a special relationship with the celebrated Chef Thomas Keller of the French Laundry in Yountville, CA.” The source: Shramsberg Vineyards. Read below for my tasting notes:

  1. Vintage: 2015

  2. Alcohol percentage: 12.4%

  3. Appellation: North Coast (54% Napa, 46% Sonoma)

  4. Appearance: medium intensity, gold in color.

  5. Nose: medium intensity, with secondary aromas.

  6. Sweetness: dry

  7. Aromas and flavors: crisp apple aromas, pear and toasty flavors.

  8. Conclusion: good wine

  9. Price: $60.00

Food Recommendation: Oysters or Ceviche would pair lovely with this crisp, sparkling wine.

Conclusion: buy this wine if you prefer a dry and crisp sparkling wine versus a sweet one. You can purchase this wine from Schramsberg’s website or directly at the Davies tasting room in St. Helena, CA.
